Creamy Pasta Salad

When you are looking for something simple, fast and satisfying to make with your low protein pasta, this is your recipe. Just a classic way to prepare a flavorful entrée or side with your favorite shape of pasta. Penne, elbows or spirals, they all taste great, you decide.

Ingredients (for 2 servings)

  • 150 g (5 oz) Loprofin Penne (measured dry), cooked
  • 50 g (2 oz) cherry tomatoes (1/3 cup)
  • 50 g (2 oz) chopped olives, pitted (1/4 cup)
  • 2 Tbsp fresh chives
  • 1 handful of fresh basil, chopped
  • 1 garlic clove, crushed
  • 50 g (2 oz) cucumber (about half of a small cucumber, diced)
  • 50 g (2 oz) salad cream* (1/4 cup)
  • Salt and pepper to taste


  • 1/2 cup tomato juice
  • 2 tsp lemon juice
  • 1 clove garlic, crushed
  • 1 Tbsp chopped chives
  • 2 Tbsp olive oil
  • Salt and pepper


  1. Chop the tomatoes, olives, chives, basil, garlic and cucumber into pieces about half the size of the pasta and add to a large bowl.
  2. Add the cooked Loprofin Penne and salad cream to the bowl and mix together.
  3. Season to taste.
  4. Can be chilled before serving.

*Salad cream is similar to mayonnaise but with no egg. You can find it at Whole Foods or your local grocer in the "international aisle"
