Pancake with Mixed Berries

Breakfast made easy (and delicious) with this easy to make pancake recipe. They bake up fluffy and when topped with fresh berries and a breakfast that can not be beat.

Ingredients

  • 20g (3/4oz) butter, melted
  • 200 mL Milupa LP Drink (4 scoops plus 180 mL water)
  • 1 tsp vanilla essence
  • 125 g (5oz) (about 1 cup plus 1 tbsp) Loprofin Low Protein Baking Mix
  • 2 tsp powdered sugar
  • 2 tsp cooking oil
  • 1/3 cup mixed berries (fresh or frozen, thawed)

Method:

  1. Combine the melted butter, LP Drink and vanilla essence.
  2. Place the Loprofin Low Protein Baking Mix and powdered sugar in a large bowl. Gradually beat in the LP Drink and butter mixture until the batter is smooth.
  3. Fold berries into batter.
  4. Preheat a non-stick frying pan and very lightly oil the base. Place 1 tbsp of batter in the pan and quickly shape into a round (approximately 6cm or 2.5 inch).
  5. Cook over a moderate heat for 1 minute, until small bubbles form on the surface. Turn and cook the reverse side until golden brown. Keep warm.
  6. Repeat with the remaining batter to make 6 pancakes.
