Cinnamon Chip Muffin Recipe

To all those cinnamon lovers: this one is for you!

Ingredients:

  • 1 cup + 3/4 cup Loprofin Baking Mix (220 g)
  • 1/4 cup butter (60 g)
  • 1/2 cup + 1/3 cup granulated sugar (170 g)
  • 1 Tbsp powdered low protein egg replacer
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/2 cup cinnamon baking chips (85 g)
  • 1/2 cup liquid LP-Drink prepared as per label instructions (120 mL/4 fl oz)

Method:

  1. Preheat oven to 360 °F. Line a muffin tray with paper liners.
  2. Cream together the butter and sugar until light and fluffy with electric mixer.
  3. Add the Loprofin Baking mix, baking powder, ginger and cinnamon into the mixture and mix together.
  4. Gradually add the LP-Drink until the mixture is smooth.
  5. Fold in the cinnamon baking chips.
  6. Spoon the mixture into muffin cups and bake in the preheated oven for 15-20 minutes, or until golden.
  7. Allow to cool and enjoy.
